So what do the Piemontese eat for Christmas? It’s not turkey. It’s not stick meat. It’s not ragu. It’s cappone. Cappone is a traditional dish from Piemonte. Can you guess what it is?

Capon: castrated rooster

According to my research, the rooster is castrated young to improve the quality if the meat. I thought about trying a recipe, but I have absolutely no clue how to get a hold of a castrated rooster in Oslo. Maybe I’ll get to try it when I’m in Piemonte for New Years Eve. I’ll keep you posted!
